Here is an easy recipe for you to make delicious muffins. To make them more nutritious and balanced, use brown sugar and replace butter with a little oil.

These are the ingredients you need to make about 14 large muffins:

  • 105 g of wholemeal flour
  • 105 g of cake flour, regular
  • 5 eggs
  • 180 g of whole cane sugar
  • 60 ml of semi-skimmed milk
  • 100 ml of extra virgin olive oil
  • Half a packet of baking powder
  • Pinch of salt
  • Pinch of ground cinnamon
  • Zest of one orange
  • 1 pack of mango and orange Doitfruit

Before you begin, turn on the oven at 170 °C.

Butter the cups of the muffin tray and flour the paper muffin cases.

Put eggs in a bowl and beat well, then add the sugar and mix until smooth. Add the oil, milk, salt and continue mixing.

Add both flours, salt, cinnamon, zest and baking powder and mix together until well-blended.

Fill the cases just halfway using a large spoon. Then add a little Doitfruit to each case (this will be the muffin filling) and then fill again with more muffin mixture. You can add pieces of natural mango for garnish.

IMPORTANT: Fill the cases just over halfway. The mixture will rise and if you overfill them, it will overflow.

Bake for about 10-15 minutes. It depends on the oven but we advise you to keep an eye on them to avoid burning.

Allow them to cool and enjoy them.
